Norwegian Salmon stir-fried with a medley of broccoli, carrots, peppers and green beans create an Asian-inspired dish not to be missed.
Ingredients

600 g Norwegian salmon fillet, skinned and deboned
25 g ginger, fresh
1 clove garlic
6 spring onions
0.5 broccoli
3 carrots
1 bell pepper, red
2 dl green beans
0.25 bunch coriander leaves, fresh
3 tbsp peanut oil
3.5 dl Chinese stir-fry sauce
1 tsp (teaspoon) sesame oil
1 orange
salt and pepper

Procedure:
Cut salmon into 1" cubes.
Grate or finely chop ginger.
Finely chop garlic and scallions.
Cut brocoli into small florets.
Thinly the slice carrots.
Cut the bell peppers into 1/4" strips.
Cut the green beans into 3" pieces.
Chop the cilantro.
Squeeze the orange and reserve juice.
Heat wok over medium-high flame. Add peanut oil, then ginger, garlic and scallions. Cook for 30 seconds.
Add broccoli, carrots, red bell peppers and green beans. Saute for 4-5 minutes.
Add stir-fry sauce and salmon and cook for a further 3-4 minutes.
Finish with sesame oil, orange juice and chopped cilantro.
Serving Suggestion:
Serve with brown fried rice
